Advieh is the Persian word for spices, and for the mixes made from them. A common blend for rice, advieh polo, uses dried rose petals, cinnamon, cardamom, cumin and sometimes saffron or orange peel. Advieh khoresh for stews tends to include cinnamon, cardamom, cumin, coriander, turmeric and dried lime. Persian cooking prefers gentle, perfumed spice to heat, so chillies play a small part. Mixes vary by region and family, with southern Iran using more pepper and chilli. Cooks sprinkle advieh over rice just before steaming, so that the aroma carries through. Jewish and Zoroastrian communities in Iran keep their own recipes.
