Amchur

Dried green mango powder, a sour, tangy seasoning that does not add liquid.

Amchur is made from unripe green mangoes, peeled, sliced, sun-dried and ground to a pale beige powder. It carries a tart, fruity sourness without moisture, which makes it useful for dry stir-fries, stuffings, chaat masala and marinades. A teaspoon lifts potato, okra, chickpea and paneer dishes. North Indian cooks use it where southern cooks reach for tamarind and western cooks for kokum. Whole dried slices are also sold, and they are soaked or ground at home. Amchur absorbs moisture, so keep the jar closed, and add it late so the sourness stays bright.
