Javitri

Javitri is mace, the dried aril that wraps the nutmeg seed inside its fruit. Fresh, it is bright scarlet and netlike. It fades to orange or tan as it dries and is sold as flat pieces called blades or ground. The flavour is close to nutmeg but lighter, more floral, with hints of pepper and citrus. In India it appears in Mughal rich dishes, biryani, korma and garam masala, and in some milk sweets. In Europe it flavours pound cake, sausages, pickling brines and béchamel. Both mace and nutmeg come from the same tree, Myristica fragrans, native to the Banda Islands, so they share a history of war and monopoly.
