Kalonji is the seed of Nigella sativa, a small flowering annual. The seeds are matte black and angular, with a faintly peppery, bitter, onion-like taste and a scent between oregano and cumin. They are a signature of Bengali panch phoron and appear on naan, in pickles, in vegetable curries and in Middle Eastern breads. In many languages it is wrongly called black cumin or onion seed, which is a source of confusion with shahi jeera and with true onion seeds. Many Muslim communities value it by tradition, and it is toasted lightly before use.
