Masala

A Hindi and Urdu word for a spice or a blend of spices, and by extension the dish made with it.

A pile: the spice ground to powder, here with a spoon. Ground spice loses its aroma faster than whole.

Masala is the South Asian word for a mix of spices, whether dry and ground or a wet paste. It can also mean the finished dish: masala dosa, chicken tikka masala, masala chai. In many homes every family keeps its own blends, ground in the kitchen and shaped by region and taste. Garam masala, chaat masala, sambar powder and chai masala are well known, but a single dish may take its own specific blend. Dry masala is toasted and ground, while wet masala is made from onions, ginger, garlic and tomato, cooked down. The word came to English as part of the general vocabulary of curry.
