Mulling is the practice of gently heating a drink with whole spices and sweetener. Mulled wine, Glühwein in Germany, vin chaud in France and glogg in Scandinavia, are made from red wine with cinnamon, cloves, orange peel, star anise and sugar, kept below a simmer so alcohol is not lost. Medieval Europe drank hippocras, a spiced sweet wine strained through a cloth sleeve named for Hippocrates. English wassail used cider or ale. Spiced hot drinks are tied to winter markets, Christmas and the cold season. Whole spices are better than ground, as they leave the drink clear and avoid bitterness.
