Spice oil
Oil infused with chilli, spices or aromatics, used as a condiment or cooking fat.

Spice oil is made by heating oil with spices, or pouring hot oil over them. Chinese chilli oil is made by pouring hot oil over chilli flakes, Sichuan pepper and aromatics so they bloom and the oil takes a red colour. Lao gan ma and similar chilli crisps add fried onion, soybean and garlic. Other examples include Italian oil flavoured with chilli, Ethiopian niter kibbeh, South Asian pickle oils, and Lebanese oil flavoured with za'atar. Because water in fresh ingredients can allow bacteria to grow in oil, home-made infusions with fresh garlic or herbs should be refrigerated and used quickly. Dry spices are safer for long keeping.
