Supper

Supper is the lighter evening meal after the main dinner, or the dinner itself in households that eat the main meal at midday. In many traditions, spice at supper is gentler: khichdi with cumin, ghee and turmeric, a bowl of rasam with pepper, soups with ginger, Spanish tapas with pimentón, and warm milk with nutmeg or turmeric, called golden milk. Many cultures hold ideas about food that is easy to digest at night, which belong to tradition and custom. Cooks also plan around sleep and family routines. Quick tempering with cumin and ghee over rice and dal is a common supper, ready in twenty minutes.
