Sichuan pepper, called huajiao, gives a tingling, numbing effect and a citrus scent. Pixian doubanjiang, a fermented chilli and broad bean paste from nearby Pixian, is a core seasoning. Chilli arrived in China after the sixteenth century and became central to Sichuan cooking.
