Pairing spices follows two logics: shared aroma and balanced contrast. Cinnamon, clove and allspice share eugenol and so bind into a warm family. Cumin and coriander contrast earth with citrus, and they appear together in most Indian, Mexican and North African blends. Cardamom and saffron pair in sweets. Mustard, fenugreek and fennel make a classic bitter, sweet and sharp triad. Chilli pairs with sour and sweet for balance in Thai and Mexican food. Regional cuisines refine their own pairs, and tradition often leads the science. Start with two or three spices and add one at a time, tasting, rather than throwing in everything.
