Legal marks that tie a food or spice name to a region where it is traditionally produced.

A geographical indication is a legal protection under which only products from a defined area, made by agreed methods, may carry a name. Examples in spice include Alleppey Green Cardamom, Malabar Pepper, Guntur Sannam Chilli and Byadgi Chilli in India, Pimentón de la Vera in Spain, Piment d'Espelette in France, Safran de Kashmir and Kalamata-style items in Europe. India has a GI registry under a 1999 act. In the European Union the equivalent is PDO and PGI. The marks help farmers fight imitation and command higher prices, but they work only with enforcement and clear standards. They also protect cultural knowledge of how the spice is grown and processed.
