Panchamrit, five nectars, is a mixture of milk, yoghurt, honey, sugar and ghee, used in Hindu worship to bathe a deity's image, and then distributed to devotees. Some temples add basil leaf, cardamom, sesame or saffron. In Palani, Tamil Nadu, the Murugan temple's panchamirtham, made with bananas, jaggery, dates, honey, ghee and cardamom, is famous and has a geographical indication. The five ingredients are said to represent different aspects of life, such as sweetness and purity. Made in small quantities and taken by the spoonful, it is a good example of how spice, usually cardamom, is a small but meaningful part of sacred food.
