The masala dabba is a stainless-steel or wooden container that holds a lid and several small cups, often seven, with a spoon, for daily spices. A typical box holds mustard seed, cumin, turmeric, red chilli powder, coriander powder, garam masala and a variation by region, such as fenugreek, asafoetida or pepper. It lets a cook reach every essential in a motion while tempering. The Malayalam name is anjaraipetti, meaning five-room box. Brides in some families receive one at marriage. Small quantities in each cup are refilled from larger jars, which keeps most of the stock sealed. It is a neat design for freshness and speed.
