Street food is among the great stages for spice. Mumbai's vada pav, Delhi's chaat, Kolkata's jhal muri with mustard oil and chilli, Mexican tacos with salsa, Thai grilled pork with chilli dips, Sichuan skewers dusted with cumin and chilli, Moroccan harira and Istanbul's spiced kokoreƧ depend on quick bold seasoning and contrast. Vendors build a repertoire of spice mixes and chutneys held in jars on the cart, and customers ask for more or less heat. Costs are low, turnover is high, so spices are fresh. Street food also shows regional taste, and spice mixes are often a family secret passed through generations.
