A spice bazaar is a traditional market where sellers display spices in pyramids and sacks, grinding and blending to order. Notable ones include Khari Baoli in Old Delhi, said to be Asia's largest wholesale spice market, the Egyptian or Spice Bazaar in Istanbul, built in 1660, the souks of Marrakech and Fez, Kochi's Mattancherry, Zanzibar's Darajani market, Jerusalem's Mahane Yehuda and Oaxaca's Mercado 20 de Noviembre. Shoppers can smell and taste before buying, and many sellers know a family recipe for each customer. Prices reflect negotiation and turnover. They hold many centuries of trade history and remain vital to daily cooking as well as tourism.
