Genna

Ethiopian Christmas, after a 43-day fast, with a feast of doro wat, injera and tej.

Spices for Genna

Genna ends the long Advent fast of Ethiopian Orthodox Christians. After the night service, families cook doro wat with eggs in spiced butter, kitfo and cheese. Spices are those of the mother cooking of the highlands: berbere, korarima, ajwain, black cumin and rue. The meal is eaten from a shared platter in groups of two or more people, with the hands.

The spices

Also part of it, and being written: Ajwain (Used in berbere and in bread.).
