Spices for supper
The light, late meal: soups, flatbreads and leftovers brought back to life.
Supper is the lighter late meal of the day in many households, often built from leftovers, soups, bread and simple dishes, with spice used lightly.
What supper is
The word is used in Britain, Ireland and North America for a late, lighter meal. In South Asia the late meal may be khichdi, a rice and lentil dish with cumin, turmeric and ghee, or roti with a simple vegetable.
Comfort dishes
Soups, porridges and one-pot rice are common suppers. Congee in China is topped with ginger, white pepper and spring onion, and chicken soup in many cultures carries pepper, bay and herbs.
Evening drinks
Spiced milk is a night drink in several traditions, such as haldi doodh in India, made with turmeric, and warm milk with nutmeg in Europe.
