Merida is the main city of the Yucatan peninsula. Yucatecan cooking has Maya roots and uses recados, spice pastes, notably recado rojo, based on annatto, and recado negro, made from charred chiles.

Spices and trade

Achiote, or annatto seeds, give a red colour and a mild earthy taste, and are ground with allspice, cumin, oregano, garlic and sour orange for recado rojo. Cochinita pibil, pork marinated in it and cooked in a pit or oven, is the best-known dish. Habanero chile gives heat.

The place and its people

Maya communities remain strong in the peninsula. The Lucas de Galvez market sells recados and chiles.

Visiting

Cochinita pibil is often eaten at weekend breakfast. Markets are best in the morning.
