Allspice

The dried berry of a Caribbean tree that tastes like cinnamon, nutmeg, clove and pepper at once.

Allspice is the dried unripe fruit of Pimenta dioica, a tree native to Jamaica, southern Mexico and Central America. The name comes from English cooks who thought it combined cinnamon, nutmeg and clove. The taste is warm and sweet with a peppery edge, owing largely to eugenol. Jamaican jerk seasoning depends on it, and it flavours Scandinavian pickled herring, British puddings, Middle Eastern kofta and American pumpkin pie. Jamaican producers dry the berries on barbecues, called pimento walks. It is one of the few major spices that is truly native to the Americas, and it was among the first spices Europeans met there.
