Single-origin spice comes from an identified place rather than a blended bulk lot. Examples are Tellicherry black pepper, Sri Lankan Ceylon cinnamon, Kashmiri saffron, Alleppey cardamom, Madagascar bourbon vanilla and Sichuan Hanyuan pepper. Specialist sellers borrow practices from coffee and wine, publishing the farm, harvest date and processing method. The idea is that traceability improves flavour and accountability, and that growers receive more for care. It also helps buyers avoid fraud. Bulk commodity spice remains the base of the industry and is perfectly adequate for many uses, but for finishing spices, whole peppercorns or saffron, origin is worth reading on the label.
