Spices for Timkat

Timkat commemorates the baptism of Jesus with processions, water blessings and white clothing. Homes serve the same dishes as Genna, with spiced stews, injera and a bread called dabo, which can be flavoured with nigella seed. The week has also a custom of grinding berbere and preparing spiced butter ahead of Lent. Smoke and spice are the sensory sign of this festival.
