Spices for Aadi Perukku

Aadi Perukku honours the rising waters of the monsoon rivers, and families picnic on the bank with a set of mixed rice dishes carried in tiffins. Puliyodarai (tamarind rice) uses a ground blend of dried red chilli, coriander seed, fenugreek, sesame and mustard, while ellu sadam (sesame rice) and lemon rice are tempered with mustard, curry leaf and turmeric. The rice dishes keep well in heat and are named for their dominant seasoning rather than for a single recipe, which makes the festival a short course in South Indian tempering.
